Roasted Acorn Squash With Sweet Sage Glaze |
Ingredients

* 2 Tbsp unsalted butter
* 2 Tbsp brown sugar
* 10 fresh sage leaves, torn
* 2 medium acorn squash, sliced into 1 inch wedges
* 2 Tbsp toasted pine nuts
* salt and black pepper to taste

Directions

1.Preheat oven to 375 degrees.
2. In large saucepan, melt butter over medium low heat, then stir in the brown sugar and sage leaves.
3. Cook until brown sugar melts completely and remove from stove.
4. Add acorn squash and toasted pine nuts to saucepan and toss until squash is nicely coated with butter/sugar/sage mixture.
5. Dump the mixture onto a large baking sheet and arrange evenly in one layer, and salt and pepper to taste.
6. Bake in preheated oven for 20 to 25 minutes or until squash is fork tender. Serve immediately while still warm.
