Roasted Asparagus With Goat Cheese Bacon Dressing |
Ingredients

* 6 bacon slices, browned well, drained, and crumbled
* 2 lbs. fresh asparagus, washed and woody stems trimmed
* 2 Tbsp olive oil
* 1/4 tsp. sea salt
* 1/8 tsp. black pepper
* 4 oz. fresh goat cheese, crumbled
* 1 lemon, zested and juiced

Directions

1. Preheat oven to 475 degrees.
2. Put asparagus on large baking sheet and cover with olive oil, salt and pepper, tossing to coat evenly.
3. Put asparagus in preheated oven and roast for 7 to 9 minutes until asparagus is just getting tender; toss once or twice while cooking.
4. Immediately put hot asparagus in serving dish; sprinkle with goat cheese, lemon zest and juice, bacon, and toss.
5. Serve immediately.

This side dish is so easy to put together and tastes gourmet! Get everything ready before you start because you'll want to quickly add the dressing ingredients to the hot asparagus so the cheese melts slightly and the ingredients warm up. You can save a bit of crispy bacon to put on top or toss it all in. You'll be serving it fast so it really won't get a chance to get too soft.
If you want more cheese flavor than the goat cheese offers, a few shavings of fresh Parmesan will be perfect right on top when you serve it up.
