Roasted Cauliflower Smash


* 1 large head cauliflower, cut into small even sized florets
* 3 Tbsp olive oil
* 1/4 tsp salt
* 1/8 tsp black pepper
* 2 Tbsp cream cheese, softened
* 1/4 cup grated Parmesan
* 1 small garlic clove, grated
* 1 Tbsp butter


1. Preheat oven to 400 degrees.
2. Arrange the cauliflower in a single layer on a large baking sheet.
3. Drizzle the olive oil over, sprinkle with the salt and pepper, and mix with your hands to be sure all the cauliflower is coated well.
4. Put in preheated oven and roast until fork tender, about 25 to 30 minutes, stirring with a spatula several times during this process.
5. Remove from oven and let cool slightly.
6. Meanwhile, put the cream cheese, Parmesan, garlic, and butter in a large bowl and smash together until blended well.
7. Put the cooled cauliflower in the bowl with the cream cheese mixture and add remaining ingredients.
8. With a potato masher, smash the mixture until cauliflower gets somewhat smooth. Taste and adjust seasoning to your liking. Do not over-smash as this will cause the cauliflower mixture to get watery.


Roasting the cauliflower makes this popular mashed potato substitute tastier than most.

This side dish suits most low carb diets, but it can be tweaked to fit low fat diets, as well. Simply substitute low fat cream cheese and eliminate the butter.

If you'd rather process the cauliflower in a food processor, you can. But, you have to be careful not to over-blend. Mix the cream cheese and other ingredients together first in the food processor, then add the cauliflower and pulse just until blended. If you over process, the cauliflower will get gooey and have a consistency more like Cream of Wheat than potatoes, so be careful.
