Roasted Pork Tenderloin and Sweet Potatoes |
Ingredients

*1 (1 lb.) pork tenderloin
*2 sweet potatoes cut into French fries
*1/3 C of barbecue sauce
*1/4 C of fresh cilantro, chopped
*2 tsp olive oil
*1/2 tsp chili powder

Directions

1. Preheat the oven to 475 degrees, line 2 baking sheets with foil and lightly spray the foil with cooking spray.
2. Stir together the barbecue sauce and cilantro and brush over the pork.
3. Mix the potatoes with the oil and sprinkle with the chili powder.
4. Roast both for 10 minutes, toss the potatoes and turn the roast.
5. Roast 8 minutes, remove the potatoes and continue to roast the meat for 15 minutes longer.

Sweet potatoes and pork tenderloin naturally go together. And, roasting sweet potatoes make this dish especially nice. I never boil my sweet potatoes anymore, not since I tried roasting them. They keep a nicer texture and a full flavor. Try this recipe and you'll have a new family favorite!
