Roasted Snapper

Ingredients

* 1 fennel bulb, cut into 1/2" slices
* 1 red bell pepper, cut into 1/2" wide strips
* 1 yellow bell pepper, cut into 1/2" wide strips
* 1 small onion, cut into 1/2" thick wedges
* 1 tablespoon olive oil
* 1 1/2 lbs snapper fillets
* 1/2 teaspoon salt
* 1/4 teaspoon coarse ground black pepper

Directions

1. Preheat oven to 425.
2. Combine fennel, bell peppers, onion and oil in a large bowl. Put in a baking pan and bake for 5 minutes.
3. Sprinkle snapper with salt and pepper then put in pan on vegetables. Bake another 12-15 minutes.
