Rosemary Orange Glazed Beef Steaks |
Ingredients

* 1/2 cup of orange marmalade
* 2 Tbsp butter
* 1/4 tsp rosemary
* 4 lean beef loin steaks, or any steak you like
* 1/2 tsp salt
* 1/2 tsp black pepper

Directions

1. Preheat the broiler.
2. In a saucepan over low heat, stir together the marmalade, butter, and rosemary. Heat the mixture for 3 minutes, stirring often, until melted and hot.
3. Place the steaks on a broiler pan and season with the salt and pepper. Broil 6 inches from the heat, and cook for time according to chart below, turning over half way through cooking time.
4. Brush the steaks with the marmalade mixture on the second side only, during the last 3 to 5 minutes of broiling.
5. Place the steaks on dinner plates and top with the remaining marmalade mixture.

You don't have to fire up a charcoal or gas grill to cook a delicious steak. But, there are a few tips to getting a perfectly cooked steak under the broiler. Timing is everything. Here are the basics:
* Medium-rare steak, broil about 12 to 14 minutes.
* Medium steak, broil about 15 to 17 minutes.
* Well-done steak, broil about 18 to 20 minutes.
This is on a broiler pan set about 6 inches under the heat element.
To check for doneness use the 'hand method.'
* With your hand open, poke the flesh under your thumb - this is rare to medium-rare.
* With your hand closed, poke the flesh under your thumb - this is medium.
* With your hand closed and clenched tight, poke the flesh under your thumb - this is well-done.
