Salami and Onion Basil Tomato Pasta |
Ingredients

* 1 tbsp olive oil
* 1 medium onion, sliced thinly
* 4 oz of salami, thinly sliced
* 2 (14 oz.) cans of diced tomatoes
* 2 tbsp fresh basil, chopped
* 2 tsp sugar
* 1/2 tsp salt
* 1/4 tsp pepper
* hot, cooked penne pasta

Directions

1. Using a large skillet heat the oil over medium heat.
2. Stir the onions and salami into the oil and cook 5 minutes or until the onions are soft and translucent.
3. Stir in the tomatoes with their juice until well combined.
4. Blend the basil, sugar, salt and pepper into the sauce well.
5. Simmer, uncovered for 5 minutes or until the sauce thickens.
6. Serve over pasta or cool and freeze for later use.

Fresh basil is what makes this tomato sauce really special. Well, the salami doesn't hurt, either! Salami is very spicy normally which makes it the perfect food to flavor a simple tomato sauce for pasta. Very flavorful, very colorful, and very filling.
I like to use penne pasta anytime a sauce is really flavorful just because I like to have a lot of texture when I have a lot of flavor. Enjoy!
