Salmon and Veggie Pasta Salad |

Ingredients

* 1 1/2 cups canned salmon
* 1 1/2 cup dry shell macaroni, cooked and drained per package directions
* 1 cup frozen stir fry blend vegetables, thawed & drained
* 1/4 cup mayonnaise
* 1/4 cup plain yogurt
* 1 teaspoon lemon juice
* 1/4 teaspoon salt
* 1/8 teaspoon black pepper
* 1/8 teaspoon dill weed

Directions

1. Put the first 3 ingredients in a large serving bowl.
2. In separate bowl, whisk together the remaining ingredients.
3. Pour the dressing over the salad ingredients and toss together until everything is coated well.
4. Cover and refrigerate for at least 1 hour before serving.

We actually use just about any veggie we have in the house for this recipe. If you don't have stir fry veggies in your freezer, just grab whatever you have, frozen or fresh. Just be sure the veggies are drained well so the salad doesn't get runny. Enjoy!
Salmon and cucumber are a great flavor combination, so if you happen to have cucumbers in season where you live, go ahead and chop some up and add them to the salad.
