Sassy Apricot Salsa |
Ingredients

* 2 cups apricots, diced small
* 1 1/2 Tbsp cilantro, chopped fine
* 2 Tbsp sweet onion, diced small
* 1/2 tsp jalapeno pepper, minced (optional)
* 1/4 tsp ground cumin
* dash red pepper flakes (optional)
* 1 lime, zested and juiced
* 1/2 tsp white wine vinegar
* 1/2 Tbsp olive oil
* salt and pepper to taste

Directions

1. Put all ingredients in glass bowl and toss to combine; refrigerate at least 1 hour before serving.
2. Serve as a side with grilled pork, fish or chicken, or with tortilla chips for a snack.

This recipe is very 'tweak-able.' If you don't want it too spicy, eliminate either the jalapeno peppers or the red pepper flakes, or both. You can also use different fruit if you wish. Any firm fruit will do, like mango, for instance. The next time you serve chips and salsa, try this recipe and surprise your family. It is definitely not your ordinary salsa!
You'll also want to try it alongside any grilled fish or meat. Just be sure to let it sit at least an hour before serving so the flavors have a chance to combine.
