Saucy Cucumber and Salmon Loaf |

Ingredients
|
Salmon loaf:
* 16 oz can salmon, drained
* 1/2 cup bread crumbs
* 1/2 cup mayonnaise
* 1/2 cup finely diced onion
* 1/4 cup finely diced green bell pepper
* 1 egg
* 1 teaspoon salt
Sauce:
* 1/2 cup sour cream
* 1/2 cup mayonnaise
* 1/2 cup finely diced cucumber
* 2 tablespoons finely diced onion
* 1/2 teaspoon fresh chopped dill weed

Directions

1. Preheat oven to 350.
2. Mix first seven ingredients together then shape into a loaf.
3. Bake, uncovered, for 45 minutes.
4. Meanwhile, mix last five ingredients together and allow to sit in refrigerator.
5. When salmon is done, serve by spooning cucumber sauce over each slice.

This cucumber sauce works equally well for a lot of fish foods, like crab cakes, or even grilled fish. The trick is to let it sit a while so the flavors can intensify and blend. You can play with the ingredients a little with either of these recipes and they'll turn out just fine. Enjoy!
