Sausage & Black Beans - Crock Pot |
Ingredients

* 2 lbs smoked sausage, cut into 1" pieces - browned & drained of fat if necessary.
* 3 cans (15 oz each) black beans, rinsed & drained
* 1 1/2 cups chopped onion
* 1 cup chopped green pepper
* 1 cup chopped celery
* 4 cloves garlic, minced
* 2 teaspoons leaf thyme
* 1 1/2 teaspoons leaf oregano
* 1/4 teaspoon black pepper
* 1/4 teaspoon cayenne pepper
* 1 chicken bouillon cube
* 5 bay leaves
* 1 can (8 oz) tomato sauce
* 1 cup water
*hot cooked rice

Directions

1. Put all ingredients in crock pot, except rice, and mix well.
2. Cook, covered, on low for 8-9 hours.
3. Find the bay leaves, remove them and throw them out.
4. Serve over hot cooked rice.

You can sure tell Autumn is in the air. All my thoughts turn to crock pot meals that fill the air with spicey aromas. I love walking into the house on a cool evening and smelling the flavors of a hearty meal waiting for me and my family. All this meal needs is an ice cold drink of your choice and the day is complete.
