Savory Cauliflower Casserole


* 1 lb cauliflower, broken into flowerets
* 4 oz fresh mushrooms, chopped
* 1/2 cup chopped red onion
* 1 tablespoon vegetable oil
* 2 teaspoons lemon juice
* 2 teaspoons apple cider vinegar
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 2 cloves garlic, minced

* garnish: 1/2 cup chopped green onions


1. Combine all ingredients, except green onions, in a bowl.
2. Transfer to casserole dish that's been coated with nonstick cooking spray.
3. Bake uncovered at 350 degrees for 45 minutes, stirring a few times during cooking.
4. Top with green onions and serve.


Rather than serving another plate of steamed or cheesy cauliflower, I decided to try something different. The apple cider vinegar, lemon juice, and garlic really make this cauliflower dish a bit different. Tangy and much more complicated than a plain old plate of cauliflower. The mushrooms also add a very grown-up flavor to this dish. This cauliflower casserole could very easily be served for a special meal.
