Savory Pine Nut Baked Zucchini |
Ingredients

*4 medium zucchini
*2 tsp olive oil
*2 onions, minced
*3 garlic cloves, minced
*1/4 C dried cranberries, chopped
*1/4 C + 2 tbsp bread crumbs
*3 tbsp pine nuts, chopped
*1/4 C Parmesan cheese, grated
*1/4 C fresh parsley, chopped
*1 tbsp anchovy paste
*1/4 tsp pepper

Directions

1. Preheat the oven to 375 and line a baking sheet with foil.
2. Cut the ends off the zucchini, 1/2 inch off the top and hollow out the zucchini leaving a 1/2 inch shell.
3. Heat the oil in a skillet; chop the removed zucchini, adding it and the onions to the skillet.
4. Cook for 10 minutes, then stir in the garlic and cook for 3 minutes.
5. Stir in the remaining ingredients, stuff the zucchini and bake for 20 minutes or until browned on top.

It's so nice to have a few different recipes for zucchini. Especially when they start to multiply like they do! This recipe is a bit unusual but once you try it, you'll become a fan. It's not bland or boring. You may want to try this out on the adults first and give the kids a bite to try. Kids may like it better if you increase the Parmesan cheese to about 1 cup... I actually would like that better too and might just take my own advice next time I make it. Enjoy!
