Savory Salmon Log with a Nutty Wrap Up |
Ingredients

* 16 oz. flaked cooked salmon (canned is okay, just drain first)
* 2 Tbsp. fresh squeezed lemon juice
* 1 tsp Worcestershire sauce
* 1 Tbsp chives, chopped fine
* 8 oz. cream cheese, softened at room temperature
* dash hot sauce or Tabasco
* 1 cup chopped pecans (or other nuts you like)

Directions

1. Mix all ingredients (except pecans) together and form into a log shape.
2. Roll salmon log gently over chopped pecans and pat gently so they stick.
3. Wrap log in plastic wrap and seal tightly. Put in refrigerator for 1 hour.
4. Serve with hearty crackers or fresh vegetables.

This kind of creamy salmon spread is perfect for a holiday buffet, but is equally delicious for any occasion. You can use low-fat cream cheese if you wish to make it healthier, which would be much appreciated at bridal or baby showers. Choose hearty crackers or toasted pita points for serving.
I use salted nuts to roll the salmon log in. I like the added layer of flavor, but you can omit the extra salt by using unsalted nuts.
