Shortbread Raspberry Tart |
Ingredients

*1 prepackaged shortbread crust
*2 Tbsp raspberry jam
*2 eggs
*2 egg yolks
*1/2 C of sugar
*1/2 C of butter, melted
*1 lemon, grated rind only
*2 drops of almond extract

Directions

1. Place the crust into a pie plate and spread the jam over the bottom of the crust.
2. Whisk the eggs, yolks and sugar into a mixing bowl until mixture gets thick.
3. Stir in the remaining ingredients and spread into the prepared crust.
4. Bake the tart in a preheated 400 degree oven for 30 minutes or until nicely browned.

What an easy (and fancy tasting) dessert! Most of the ingredients are already in my kitchen, so with just one quick stop at the grocery store for shortbread crust, we can have a beautiful dessert that tastes like it took hours and hours to create.
If you don't have almond extract it won't make much of a difference. Use a little vanilla extract instead if you like.
