Sicilian Pilaf In A Minute

Ingredients

* 1 1/2 cups beef broth
* 1 medium onion, chopped fine
* 1/4 cup raisins
* 1 tablespoon butter
* 1 1/2 cups minute rice, not cooked
* 2 tablespoons sliced almonds

Directions

1. Mix broth, onion, raisins, and butter in a saucepan. Heat to a boil.
2. Stir in rice then cover and remove from heat.
3. Let sit for 5 minutes.
4. Fluff and serve, topping with almonds.

Story

This is a great way to use Minute Rice to make a quick side dish, and it's fancy enough to hide the fact that you used Minute Rice! Of course, you can make it with any rice. Just cook the rice first, then follow the same directions.
