Simple Tomato & Herb Spaghetti Sauce


* 28 oz can diced tomatoes
* 6 oz can tomato paste
* 1 bay leaf
* 1/2 tsp salt
* 1/2 tsp basil
* 1/4 tsp marjoram
* 1/4 tsp thyme
* 1/4 tsp oregano
* 1/8 tsp garlic powder
* 1/8 tsp crushed red pepper

* cooked spaghetti
* optional: grated Parmesan cheese


1. Put all ingredients in a large saucepan and stir.
2. Heat on medium-high until mixture comes to a boil.
3. Turn heat down immediately, loosely cover pan with lid, and simmer very slowly for 20 to 30 minutes, being sure to stir occasionally.
4. Cook spaghetti according to package directions.
5. Remove bay leaf from sauce and spoon sauce over hot spaghetti. Top with grated Parmesan cheese if desired.


The beauty of this sauce is in its simplicity. The herbs and spices are what makes the dish taste great.

You can add browned ground beef or ground pork to this recipe to turn it into a meat sauce. However, it is nice to have a simple vegetarian-style red sauce recipe you can turn to when you want one.
