Skillet Chuck Wagon Chili |
Ingredients

* 1 1/2 lbs ground chuck
* 1 cup onion, chopped
* 1 cup green bell pepper, chopped
* 1 cup water
* 1 beef bouillon cube
* 2 cans (8 oz each) tomato sauce
* 1 6 oz tomato paste
* 2 cans (15 1/2 oz each) dark red kidney beans, rinsed & drained
* 3 teaspoons chili powder
* 1/4 teaspoon cumin
* 2 tablespoons Worcestershire sauce

Directions

1. Brown ground chuck with onion and bell pepper in large skillet.
2. Add all remaining ingredients, stir well.
3. Simmer on low for 35 to 45 minutes, stirring occasionally. Cover with lid loosely while you simmer.

When you picture a chuck wagon in the old west, you picture a pretty basic cooking set up. That's what this simple chili reminds me of. It's not fussy in the least, just brown the ground chuck, onion, and green pepper and throw in the rest. That sounds pretty much what I'd expect a chuck wagon cook to do. This is the kind of recipe that the man of the house might like making. That's a great idea! One less day you have to plan a meal, Mom!
