Smoky Cheese and Salmon Melt


*4 English muffins, split and toasted
*2 C of cooked smoked salmon, broken into pieces
*8 slices of smoked cheese, like Provolone


1. Allow the broiler to preheat and line a broiler pan with aluminum foil.
2. Place open muffins on the broiler pan and top with the salmon and cheese.
3. Broil 2 minutes or until the cheese melts.


This sandwich is so simple but so elegant. Why? It's the ingredients. Nice Provolone or any other good smoky cheese and salmon are both elegant ingredients. You don't need anything else to make this open face sandwich a hit!
