So Good For You Applesauce |
Ingredients

* 4 C fresh of rhubarb, cut into 1/2 in. chunks
* 2 apples, peeled and chopped
* 2 TBSP granulated sugar substitute
* 1 C of water
* 2 TBSP unsalted butter
* 1 tsp vanilla

Directions

1. Mix together the rhubarb, apples and sugar substitute in a sauce pan.
2. Pour the water into the pan and place the pan over low heat.
3. Cook, stirring occasionally, for 40 minutes or until the rhubarb and apples are tender.
4. Remove the pan from the heat and allow it to cool for 15 minutes.
5. Stir the butter into the mixture until it has completely melted.
6. Add the vanilla blending it in well.
7. Cover and refrigerate until chilled through and ready to serve.

Truth be told, this is best served over vanilla ice cream. We've used a sugar substitute here, but you can make it with regular granulated sugar following about the same quantities, just being sure to taste about halfway through adding the sugar. Or you can make it as is and serve it over a sugar-free ice cream. No matter how you make it, it tastes fantastic!
