Soda Pop Pancakes |

Ingredients
|
* 1 C diet lemon-lime soda
* 1/4 C plain fat-free yogurt
* 1 C plus 2 TBSP frozen blueberries, thawed and drained
* 1 1/2 C reduced-fat baking mix
* Butter flavored cooking spray

Directions

1. Pour the soda into a large mixing bowl.
2. Add the yogurt and stir until smooth.
3. Fold in the blueberries.
4. Spray a griddle with the cooking spray.
5. Allow the griddle to heat until a drop of water placed on it dances.
6. Pour a 1/4 C of the batter onto the griddle.
7. Cook until bubbles begin to form around the edge.
8. Flip and continue cooking until brown.
9. Continue until all the batter has been cooked.
10. Serve immediately.
