Sour Cream and Tomato Baked Chicken


* 3 lbs boneless skinless chicken breasts
* 1 large onion, sliced
* 1 tablespoon butter
* 1 1/2 tablespoons paprika
* 1 can chicken broth
* 1 can tomato paste
* 1/2 pint sour cream


1. Preheat oven to 350 F.
2. Saute onions in butter until translucent. Stir in paprika, tomato paste and broth. Turn off stove and stir in sour cream.
3. Place chicken breasts in baking dish then pour sauce over chicken.
4. Bake for 1 hour, basting with sauce occasionally.


You might want to use smoked paprika for this dish to bump up the flavor another notch. As is, it's also very yummy. This dish seems to go over quite well with kids, although you may need to eliminate the onions.

However, adding a dash of onion powder will replace the flavor of the onions, and chances are the kids won't have as much of a problem with the onions since the issue is usually the texture and not so much the taste.
