Southern Style Pulled Chicken with White BBQ Sauce |
Ingredients

* Ingredients for White BBQ Sauce:
* 1 cup mayonnaise
* 1/2 cup apple cider vinegar
* 1 lemon, squeeze juice
* 1 Tbsp black pepper
* dash red pepper flakes
* salt to taste
* Ingredients for sandwich:
* 3 cups cooked chicken, shredded with a fork
* 2 cups cole slaw, chopped fine, or use angel hair cole slaw
* 1 cup White BBQ Sauce, divided (recipe follows)
* 6 hearty rolls or hamburger buns

Directions

1) Make White BBQ Sauce by combining all ingredients for BBQ sauce in large bowl. Whisk together until smooth. Can be kept in refrigerator for 6 or 7 days in a tightly closed container.
2) To make sandwich: Put cole slaw in a bowl with 1/4 cup White BBQ Sauce and mix together.
3) Put shredded chicken in separate bowl with remaining 3/4 cup White BBQ Sauce and mix well.
4) Build sandwiches by putting pile of cole slaw on the bottom of each bun, then top with shredded chicken mixture. Put top bun on and enjoy.
5) You may also like to add sliced dill pickles on top of the shredded mixture.

You can buy white barbecue sauce, but this recipe is so simple and delicious, why bother?
If you happen to have some cole slaw left over from another meal, just use that instead. You'll still want to make the white barbecue sauce, though, to add to the shredded chicken. I actually prefer this method, having cole slaw with a different dressing, because it mixes up the flavors a little. Either way, this is a nice meal.
