Spiced Apple Plum Oatmeal

Ingredients

* 2/3 C cooking oats
* 1/2 C water
* 1 C apple juice
* 1/4 tsp cinnamon
* 1/8 tsp salt
* 2 Tbsp pecan pieces
* ½ C dried plums, chopped
* 1/4 C dried apples, chopped
* 1/3 C milk
* 1 egg
* 1/2 tsp vanilla extract

Directions

1. Place the oats into a saucepan with the water and apple juice and place over medium heat.
2. Sprinkle in the cinnamon and salt and stir to combine.
3. Add the pecans and stir.
4. Bring the mixture to a rapid boil.
5. When boiling adjust the heat to low and cook 4 minutes or until it begins to thicken.
6. Pour the milk into a small mixing bowl.
7. Add the egg and vanilla and whisk until well combined.
8. Pour the mixture into the oat mixture.
9. Continue cooking 1 additional minute being sure to stir constantly.

Story

This fancy oatmeal is perfect for a lazy morning, when nobody has to rush out of the house. It's also a great treat for an evening meal particularly if your large meal was at noon that day. Maybe you ate your big meal at noon-time because of a holiday or even a pool-side cookout. Wouldn't a nice, hot bowl of oatmeal laced with sweet spices and fruit taste good before bedtime?
