Spicy Chicken Shrimp Stir Fry |
Ingredients

* 1 tbsp soy sauce
* 1 tbsp Chinese rice wine
* 2 tsp curry powder
* 1 1/4 cup chicken stock or broth
* 1 tbsp cooking oil (high heat like safflower or peanut or canola)
* 1 garlic clove, crushed
* 1/2 tsp fresh ginger, grated
* 1 small red chili pepper, seeded and chopped
* 1 chicken breast, thinly sliced
* 10 oz. shrimp, peeled de-veined and cooked
* 1/4 cup frozen sweet peas
* 2 spring or sweet onions, finely chopped
* 5 oz. Chow Mein noodles
* 2 tbsp fresh cilantro, chopped

Directions

1. Mix the soy sauce, wine, curry powder, and stock together in a bowl, whisking until combined well.
2. Heat the oil in a wok or very large fry pan and stir in the garlic, ginger and chili and cook 1 minute.
3. Stir in the chicken and cook 2 minutes.
4. Add the shrimp, peas, onion, noodles and soy sauce mixture and cook 2 minutes.
5. Stir in the cilantro before serving.

Be sure to use a 'high heat' oil when you make any stir fry because you've got to keep the pan screamin' hot and keep it that way. Stir fry meals require that you work fast, so have all your ingredients out, measured, chopped, and ready!
If you like, serve this stir fry over noodles, even rice noodles which add even more fun and interest to your stir fry.
