Spicy Garden Summer Salsa


*3 small to medium cucumbers, peeled, seeds removed and chopped
*3 medium tomatoes, chopped into small pieces
*1 green bell pepper, seeds removed and chopped into small pieces
*2 jalapeno pepper, seeds removed and minced fine
*1/2 C red onion, finely chopped
*2 tbsp cilantro, minced
*2 tbsp fresh dill, minced
*3 splashes of lime juice


1. Place the vegetables into a bowl and toss to combine.
2. Add the cilantro and dill and toss again.
3. Add the 2 splashes of juice and toss again.


Use really fresh ingredients when you make this salsa. The cucumbers especially need to have a real "right off the vine" smell. The combination of these fresh garden vegetables with the cilantro makes this salsa the perfect accompaniment to grilled fish because it's so light.
