Spicy Grilled Crab Patties |
Ingredients

* 12 oz of fresh, frozen or canned cooked crabmeat
* 3/4 C plain bread crumbs
* 1/2 C red bell pepper, chopped fine
* 3 green onions, chopped fine
* 3 tbsp mayonnaise
* 2 tsp Dijon mustard
* 1/4 tsp hot pepper sauce
* 1/4 tsp salt
* 1/8 tsp pepper
* canola, or other high-heat vegetable oil to brush on patties before grilling

Directions

1. In a mixing bowl flake the crab meat with a fork being sure to remove any cartilage.
2. Add in bread crumbs, red bell pepper, and onions and mix well.
3. Blend in the mayonnaise, mustard, hot pepper sauce, salt and pepper.
4. Shape into eight patties about 3/4 in thick.
5. Refrigerate covered for at least 60 minutes.
6. Completely coat the patties with vegetable oil.
7. Heat the grill to the high temperature.
8. Grill for 4 minutes on each side.

Grilling crab patties can be tricky because they can dry out quickly. That's why there are plenty of veggies, like onion and bell pepper, in this recipe. That, along with the mayonnaise and Dijon mustard help keep the patties moist and grillable. Watch your time closely, also, to ensure the grab patties do not overcook.
Serve on really hearty small rolls or buns with a cold slice of sweet Vadalia onion and a little spicy mayonnaise sauce made simply by mixing mayonnaise with some chili sauce, Dijon mustard, and red pepper flakes. Very tasty meal!
