Spicy Sweet Apricot Chutney |
Ingredients

* 1 1/2 cups finely chopped apricot
* 1/2 cup chopped chives
* 2 jalapeno peppers, seeded and chopped
* 3 tablespoons brown sugar
* 1 tablespoon minced ginger
* 1 tablespoon minced fresh basil
* 1/2 teaspoon salt
* 3 tablespoons apple cider vinegar

Directions

1. Place all ingredients in large saucepan over medium high heat and bring to a boil.
2. Immediately turn heat down to low and simmer for 15-20 minutes, stirring occasionally.
3. Serve on toast, pancakes, or waffles.

Story

Plain fruit chutney is usually too sweet for my family's taste. That's why we like this recipe. With the added hot spicy flavor of the jalapeno, it just "cuts" the sweet flavor enough to make it tastier. Also, the apple cider vinegar adds a bit of tangy flavor, too.
