Spinach & Garbanzo Wholemeal Pita Pockets


* 1/4 C extra virgin olive oil
* 1 (15 oz) can Garbanzo Beans
* 10 oz fresh baby spinach, washed and dried
* 1 tsp sea salt
* Juice of 1 lemon

* 4 Wholemeal Pita breads


1. Place the oil in the pan and heat over medium.
2. Add the beans and cook 3 minutes, stir occasionally.
3. Stir in the spinach, in several batches, and cook until just wilted then season with the salt.
4. Stir in the lemon juice.
5. Toast the pita bread, then stuff with the spinach/bean mixture.


I make these for a quick, nutritious lunch. You can add other ingredients, but I like just the flavor of the spinach and garbanzo beans alone. These sandwiches are simple but delicious.

If you get complaints from your meat-eaters, remind them that garbanzo beans ARE a protein. Enjoy!
