1. Combine all ingredients, except rice, in crock pot. Cook, covered, on low for 10 hours.
2. Add rice, stir well. Let sit, covered, for about 5 minutes or until rice is cooked.
You have to be careful with pea soup... it can get a little too strong flavored for the youngsters. It can also boil too hard and get too thick. That's one of the reasons I love my crock pot - you are always under control when you're simmering soup for a long time. This recipe is quite kid-friendly because it has a lot of ham and carrots, and doesn't have that dark, heavy split-pea flavor that can happen. It's very fresh tasting. Enjoy!
