Spring Day Salad

Ingredients

* 2 medium apples, cored and chopped
* 1 TBSP orange juice
* 3 TBSP orange juice
* 1 TBSP lemon juice
* 3/4 C celery, chopped
* 1/3 C dates, chopped
* 1/3 C raisins
* 1/2 C plain nonfat yogurt
* 2 TBSP honey

Directions

1. Place the apples in a large mixing bowl.
2. Add 1 TBSP orange juice and the lemon juice.
3. Toss to cover apples well.
4. Add the celery, dates and raisins.
5. Toss.
6. In a small bowl mix together the yogurt, honey and remaining orange juice.
7, Mix together until completely combined.
8. Pour the yogurt mixture over the apples.
9. Fold together until apples are completely covered.
10. Cover the bowl and place in the refrigerator 1 hour.
11. Serve cold.
