Squash Casserole |
Ingredients
|
* 2 lbs. yellow squash or a large bag of frozen squash
* 2 tablespoons chopped bell pepper
* 2 tablespoons chopped onions
* 1 egg - beaten
* 1/4 cup of milk
* 1/3 cup crushed crackers
* 1/2 cup grated cheddar cheese
* salt and pepper to taste

Directions

1. Slice and boil squash in salted water until tender.
2. Drain and mash.
3. Saute bell pepper and onion in butter.
4. Add all other ingredients to squash, except the cheese.
5. Salt and pepper to your taste.
6. Pour into a casserole dish.
7. Bake at 350 degrees for 30 minutes or until bubbly.
8. Sprinkle cheese on top. Allow it to melt before serving.
*This makes a small square size dish, double to make a larger rectangular dish.

I use fresh squash in the summer and fall. Frozen is great when fresh squash is harder to find. This is great with anything. It is a good way to get your kids to eat their vegetables.
