Stew For The Irish In All Of Us |
Ingredients

* 2 lb. lamb cut into chunks
* 2 lb. white potatoes cut into 1/2 inch chunks
* 2 onions, chopped
* 3 to 4 C water
* Parsley
* Salt and pepper to taste

Directions

1. Place 1/2 of the potatoes in the bottom of a Dutch oven pan.
2. Layer 1/2 of chopped onions on top of the potatoes.
3. Add all the lamb chunks.
4. Place the other 1/2 of the onions on top of the lamb.
5. Finally place the other 1/2 of the potatoes on top of the onions.
6. Add the salt and pepper and some parsley to the top.
7. Cover with enough water to fill the pan 3/4 full.
8. Heat over high heat until the water begins to boil.
9. Reduce heat to low.
10. Cover the pot and cook 2 hours.
11. Potatoes should be tender and the stew slightly thick.
12. If the stew is too thick add more water.
