Stuff My Muffins with Ham and Cheese


* 3/4 C Cheddar cheese (low-fat optional)
* 1/4 C grated Parmesan cheese
* 1 3/4 C baking mix
* 1 C skim milk
* 1/4 tsp black pepper
* 1/4 C ham, chopped fine


1. Set oven on 400 degrees to pre-heat.
2. Prepare muffin tin by placing paper baking cups in the cups of a muffin tin or spray the cups with a non stick cooking spray.
3. Put the Cheddar cheese and Parmesan cheese in a bowl together and toss to combine.
4. Add the baking mix to cheese and pour in the milk. Sprinkle in the pepper. Mix together making sure the baking mix is completely moistened and there are no large lumps, but do not over mix.
5. Fold in the ham making sure it is mixed throughout the batter.
6. Spoon batter into cups filling each muffin cup about 2/3 full.
7. Bake 13 - 15 minutes or until a nice golden brown and the muffins bounce back easily when carefully touched.


I like "grab-n-go" recipes for lunch boxes. This is better still warm though, so you may want to try it first right out of the oven.
