Summertime Melon Pie
Ingredients
* 1 TBSP unflavored gelatin
* 1/4 C of sugar substitute
* 3 eggs, slightly beaten
* 1/2 C lime juice
* 1/4 C water
* 1 tsp lime zest
* 2 drops green food coloring
* 3 C low-fat whipped topping, thawed
* 1 1/2 C cantaloupe, cubed
* 1 9 in deep-dish pie shell, baked
* Low-fat whipped topping
* 1/3 C toasted almonds, sliced
Directions
1. Mix together in a large saucepan the gelatin and sugar substitute.
2. In a large mixing bowl place the eggs, lime juice and water.
3. Whisk until mixed together well.
4. Pour the mixture into the saucepan with the gelatin and sugar substitute.
5. Place the saucepan over medium heat.
6. Stirring continuously bring mixture to a boil.
7. As soon as the mixture begins to boil turn off the heat.
8. Stir in the lime zest and food coloring.
9. Place the gelatin mixture into the refrigerator until just beginning to become firm.
10. Remove the gelatin and place in a large mixing bowl.
11. Add the thawed whipped topping and stir well.
12. Fold in the cubes of cantaloupe.
13. Gently spread the mixture into the baked pie crust.
14. Cover and refrigerate until very firm.
15. Just before serving spread the top with whip topping and sprinkle with the almonds.
