Sunny Lemon Smothered Chicken

Ingredients

* 1/2 C. margarine
* 1 TBSP lemon juice
* 1 tsp. poultry seasoning
* 4 chicken breasts, boneless and skinless
Fresh parsley and lemon slices for garnish

Directions

1. Place the margarine in a small sauce pan over low heat.
2. Melt margarine completely.
3. Add the lemon juice and poultry seasoning and mix well.
4. Cook on low 2 minutes.
5. Preheat oven to 350 degrees.
6. Spray a casserole dish with a non stick cooking spray.
7. Place the chicken breasts in a single layer in the casserole.
8. Pour the liquid mixture over the chicken.
9. Bake 55 minutes or until chicken is done.
10. Garnish with fresh parsley and lemon slices before serving.
