Super Easy Pork Loin - Crock Pot

(Super Easy CrockPot Pork Loin)

Ingredients

* Pork Loin Roast (about 2 - 3 pounds)
* 1 Tbsp. soy sauce
* medium onion, sliced
* 1 bay leaf
* 1-2 cloves of garlic

Directions

1. Place pork loin in crockpot, lay onions on top of roast. Press garlic cloves and add to crockpot with soy sauce and bay leaf.
2. Cover. Cook on high for about 1 hour, then on low for 6 hours (or cook on high longer and shorten the low cooking time.)
3. Slice and enjoy! This is a favorite even with my picky kids!

It's a recipe I developed to get my extra picky children to eat something new! My son helped me put it all together and he gobbles it up every time we make it.

I made this today using a 5 pound pork loin I had and it turned out so well! I was worried about the cooking time since I used a loin that was much bigger than the recipe called for but it turned out perfectly! It was falling apart! I was surprised at the amount of liquid there was! It was served over Jasmine Rice and then I made pork sandwiches and dipped them into the au jus like a French Dip. It was so easy!
