Super Rich Creamy Turkey Noodle Soup

After Thanksgiving we have a ton, or it seems, of turkey to use up. Yes, we could cook a smaller turkey, but why bother? Besides, what would I do the day after Thanksgiving if I couldn't make turkey soup? Ha! There are many varieties of turkey soup, but a nice, rich and creamy soup with thick homemade noodles tops the list! Enjoy!
Of course, you don't have to make homemade noodles to enjoy this soup. Just use some good extra wide egg noodles.
You could add dumplings instead of noodles. A simple way to add dumplings to any soup is to use any good biscuit in a tube and just snip them into small pieces with a scissors.
I also like to sprinkle some freshly cut parsley over the soup when served. Very filling and delicious.
