Super Veggie Smoothie |
Ingredients

* 2 C of vegetable juice (V8 juice or other tomato juice is just fine)
* 1/4 C carrot juice (if you can't find carrot juice, blend about 1/2 cup finely grated carrots with several ice cubes until you get a smooth mixture)
* 1 tsp. lemon juice
* 1 tsp. hot sauce (or to taste)
* 4 spinach leaves
* 1 tsp. parsley flakes
* 12 ice cubes

Directions

1. Pour the vegetable and carrot juices into the blender.
2. Add the lemon juice to the mixture.
3. Pour the hot sauce into the juices.
4. Place the spinach leaves into the blender.
5. Sprinkle the parsley flakes in.
6. Carefully place the ice cubes into the mix.
7. Cover the blender and mix until very creamy.

This is one way to get the kids to eat their vegetables! You can add other ingredients to this basic veggie smoothie if you like. Additional spices or herbs will create different flavors for different occasions. Perhaps some cilantro added or even a dash of chili powder would make a smoothie that would be great when having enchiladas or tacos for dinner.
You can also serve this smoothie over ice in tall glasses if you want even a more refreshing cooler-style drink. Insert celery stalks, sliced crispy pickles, or any other garnish for a truly inspired beverage.
