Surprise Dried Fruit Muffins |
Ingredients

* 1 C soybean flour
* 1 C graham flour
* 1 tsp salt
* 2 tsp baking powder
* 2 TBSP sugar
* 3/4 C skim milk
* 1 egg
* 1 TBSP canola oil
* 1/2 dried fruit, any kind, chopped

Directions

1. Set the oven temperature to 425 degrees and allow the oven to heat.
2. Meanwhile, place paper muffin cups into a muffin tin or spray each muffin cup with a non stick cooking spray.
3. In a mixing bowl sift together the soybean flour and graham flour. Then add the salt and baking powder and sift together.
4. Add the sugar and gently fold together. Set aside.
5. Into another mixing bowl, pour the milk, add the egg and canola oil, and whisk together until well blended.
6. Now pour the egg (wet) mixture into the flour (dry) mixture.
7. Stir just until all the dry ingredients are moistened through.
8. Gently fold in the chopped dried fruit and incorporate until thoroughly covered.
9. Fill each muffin cup with the batter not quite to the top.
10. Bake for 16-18 minutes or until a nice golden brown and a toothpick inserted in the center comes out clean.

Surprise is right. These are really yummy. I see piles of dried fruits in the grocery store and never know what to do with them. You'll find them on special too around the holidays, so it's nice to have a use in mind when you're out shopping. And the flavor of dried fruit is concentrated, so you really get a lot of bang for your buck.
