Sushi Bar Style Seaweed Salad |
Ingredients

* 1 oz dried wakame seaweed
* 1/4 cup rice vinegar
* 2 Tbsp grapeseed, canola, or any flavorless oil
* 1 tsp toasted sesame oil
* 1 tsp sea salt
* 1 Tbsp sugar
* sprinkle of red pepper flakes
* 2 Tbsp toasted sesame seeds

Directions

1. Rinse the wakame (seaweed) in a colander and drain. Place in a glass bowl and cover with fresh water.
2. Allow to soak until wakame is soft, about 5 to 10 minutes. Dry by squeezing between clean towels. Trim any tough spines, then slice into very thin strips, and set aside.
3. Prepare the dressing by whisking together the remaining ingredients in a glass serving bowl.
4. Then, toss in the prepared wakame and mix well. Chill if desired or serve at room temperature.

Any time I go to a sushi bar, I order a side dish of seaweed salad. It is so beautiful and crunchy and delicious... it's actually rather addicting. And, the sushi that comes with seaweed salad on top is my absolute favorite. With a side salad, I can top any sushi I want with a pile of seaweed salad!
This recipe is very easy to make. Once you get hooked on this, you'll probably want to stock up on wakame, as well as the other ingredients. Enjoy!
I almost forgot! I bet you would like to know how to make that yummy spicy mayo that normally is served with seaweed salad. It's very simple:
if you can get Japanese mayonnaise, use that, if not just use regular mayonnaise. Put mayo in a bowl and squirt in some Sriracha Hot Chili Sauce. Stir and add more chili sauce until you get a nice rich orangey color; taste and adjust.
