Sweet Apple Squash Bake

* 4 C of water
* 2 lbs butternut squash, peel, seeded and cubed
* 1 (21 oz.) can of apple pie filling
* 3/4 C cranberry sauce
* 2 tbsp apricot preserves
* 2 tbsp orange marmalade

1. Pour the water into a large saucepan and place over high heat.
2. Bring the water to a rapid boil then carefully add the squash.
3. Cover the saucepan and turn the heat to low.
4. Cook for 20 minutes or until the squash is fork tender.
5. Thoroughly drain the squash.
6. Allow the oven to preheat to 350 degrees.
7. Coat the bottom only of a casserole dish with cooking spray.
8. Spread the pie filling evenly over the bottom of the prepared dish.
9. Layer the cooked squash over the pie filling.
10. Place the cranberry sauce into a mixing bowl.
11. Add the preserves and marmalade to the cranberry sauce.
12. Stir until blended well.
13. Spread the mixture over the top of the casserole.
14. Bake in the oven 20 minutes or until heated all the way through.

I'm not sure if this is a side dish or a dessert. You'll have to decide. It is awfully tasty, though, so whatever it is doesn't matter. The cranberry tops the list of yummy ingredients, at least to me, because I love the tangy flavor. Too much sweet doesn't work well in my book, so adding something wonderfully tangy like cranberries really makes this dish. Enjoy1
