Sweet Bell Pepper & Onion Grilled Sandwiches |
Ingredients

*1 Tbsp cooking oil
*1 Tbsp balsamic vinegar
*1 garlic clove, grated
*1 sweet green bell pepper, sliced circles 1/4 in thick
*1 sweet red bell pepper, sliced circles 1/4 in thick
*1 sweet yellow bell pepper, sliced circles 1/4 in thick
*1 sweet onion, sliced circles 1/4 inch thick
*4 hard rolls, split and toasted
*1/3 cup Dijon mustard
*4 slices of mozzarella cheese
*8 lettuce leaves
*1 tomato, sliced thin in circles

Directions

1. Place the oil, garlic, and balsamic vinegar in large bowl and add all peppers and onion slices. Let sit for 5 minutes to marinade.
2. Turn grill on medium high and arrange peppers and onion on grate or grilling basket and grill, turning once until charred a bit and softened, about 6 minutes total time.
3. Spread the bottom of each bun with mustard.
4. Place the hot grilled peppers and onions on the bottom of each roll, distributing evenly, then top with with cheese slices.
5. Put in broiler if you wish to melt the cheese, about 4 inches from the heat for 1 minute or until the cheese melts. You may also wish to toast the top of each bun at the same time.
6. Top each with lettuce, tomato slices, then put the top of the bun on.

If you have a vegetarian in your house, this is an excellent recipe to serve. Because you're grilling and charring the peppers and onion, you are getting that "burger" taste without the meat.
You can include a thinly sliced Portobello mushroom to add the texture of a beef pattie if you like. Also, consider using Smoked Provolone instead of Mozzarella cheese for a little extra flavor.
