Sweet Carrot Chip Fries


* 1 lb carrots, peeled and sliced into very thin circles
* 3 tablespoons butter
* 1 tablespoon brown sugar
* salt and pepper to taste


1. Heat butter in large heavy skillet on medium-high heat until sizzling.
2. Spread carrots evenly in skillet.
3. Sprinkle over the top of the carrots with brown sugar and salt & pepper and do not stir.
4. Fry undisturbed over medium-high heat for 5 minutes then flip over with a spatula or tongs and fry another 5 minutes.
5. Serve immediately directly from skillet with all the good brown sugar and butter sauce. DO NOT drain on paper towels.


This recipe is a take-off on a classic Candied Carrots recipe that I use often. Just simple butter and brown sugar brings out the best in cooked carrots. But, this recipe takes it up a notch by frying the carrots instead of boiling them in water. Try it out on your kids - you can hardly miss!
