Sweet Chicken Ginger & Curry with Rice - Crock Pot


* 3 boneless skinless chicken breast halves, cubed
* 1/2 cup chicken broth
* 10 oz can cream of chicken soup
* 1 medium onion, chopped
* 1 red bell pepper, chopped
* 1/4 cup golden raisins
* 1 1/2 teaspoons curry powder
* 1/4 teaspoon ground ginger
* hot cooked rice


1. Place all ingredients, except rice, in crock pot. Mix well.
2. Cook, covered, on low for 5-6 hours. Serve over rice.


The combination of raisins, curry, and ginger is heavenly! If your youngsters haven't tried curry yet, this is a great recipe to make that introduction. The raisins will sell them on it everytime. Truly, this is a kid-friendly recipe, even if at first glance you might not think so. Give it a try! I even added a few more raisins to make it that much more appealing to the younger kids. Enjoy!
