Sweet Cream Stuffed Grapes |
Ingredients

* 4 oz. cream cheese, room temperature
* 3 TBSP confectioners’ sugar
* 1 1/2 tsp lemon juice
* 1/2 tsp lemon peel, grated
* 1 lb. globe grapes, seedless

Directions

1. In a small mixing bowl put the softened cream cheese, sugar, and lemon juice.
2. Beat with an electric mixer on the low setting until creamy.
3. Using a rubber spatula blend in the lemon peel.
4. Put in the refrigerator covered for at least 60 minutes.
5. The grapes should be rinsed and then dried with a paper towel.
6. With the sharp point of a knife cut an X into the top and down to 1/4 inch from the bottom of each grape.
7. Carefully spread the grapes apart.
8. Transfer the cream mixture into a sealable plastic bag.
9. Cut a small hole in one corner of the bag.
10. Gently pipe the cream mixture into the prepared grapes.
11. Chill the grapes covered for at least 1 hour before serving.

When summer comes along, I'm always looking for little treats that not only refresh, but intrigue, as well. If I'm going to host Mommy & Me day at my house, I want something that the Moms and toddlers alike will fall in love with. This is a great kid-friendly recipe that also is appreciated by the Moms who normally get nothing more than a cookie with their kids. Don't Moms deserve a little treat, too?!
