Sweet Dried Cranberry Apple Chicken - Crock Pot


* 6 chicken breasts, boneless and skinless
* 6 green onions, chopped
* 1/2 C dried sweet cranberries
* 1/2 C dried apples, chopped
* 1/2 tsp garlic, minced
* 2 tbsp brown sugar
* 2 tbsp water
* 1 tsp lemon juice
* 2 tsp butter or margarine


1. Lay the chicken into the bottom of the crock pot and sprinkle in the green onions.
2. Add the cranberries, apples and the garlic to the mixture
3. Sprinkle the brown sugar evenly over the fruit.
4. Pour the water and lemon juice over the entire mixture.
5. Dot the top evenly with the butter.
6. Cook covered for 6 hours on low.


Dried cranberries and dried apples are a great way to keep fruit in the house without having to worry about spoilage. This recipe uses both in a very delicious way. You end up with a chicken dish that is both savory, thanks to the onions and grlic, and sweet, thanks to the fruit. Both kids and grown ups will be asking for more!

Serve with a little brown rice - wild rice sidedish. The nutty flavor of both really compliment the fruit, especially the cranberries.
