Sweet Granny Smith And Rosemary Quinoa Salad

Ingredients

* 4 cups cooked quinoa
* 1/2 tsp ground cinnamon
* 1 tsp honey
* 1 Granny Smith apple, cored and diced
* 1 tsp fresh squeezed lemon juice
* 1 tsp chopped fresh rosemary
* dash kosher salt

Directions

1. Put quinoa in a bowl. This can either be cold leftovers or just cooked and room temperature.
2. Add the remaining ingredients and toss to combine.
3. Taste and add a dash of salt and adjust seasonings as desired.
4. Serves 4.

Story

Don't let the rosemary scare you. It adds a wonderful depth of flavor to what could otherwise be just another sweet apple and cinnamon salad. The crunchy quinoa is the perfect 'vehicle' for all these flavors and textures. This is an easy salad to make, and one that kids especially love. And, go ahead and add a few raisins or even chopped nuts if you like. Enjoy!
