Swiss Melon & Mint Pasta Salad |
Ingredients

*1 1/2 C bow tie pasta, cooked, drained, and cooled
*2 C cantaloupe, cut into chunks
*1 C Swiss cheese, cubed
*2 TBSP fresh mint, finely snipped
*1/3 C poppy seed dressing
*2 C of watercress

Directions
|
1.Toss together the pasta, melon, cheese, and mint until well combined.
2.Pour the dressing over the salad and toss to coat.
3.Just before serving add the watercress and toss to blend in.

Yes, this is an unusual combination, but it is very tasty and refreshing. Be sure all the ingredients are at the peak of their flavor, the melon is ripe, the mint is minty, and the watercress is crisp. Cook the pasta just al dente and serve this salad cool, but not refrigerator temperature.
