Tangy Cheddar Broccoli


* 6 cups chopped broccoli
* 2 tablespoons butter
* 2 tablespoons flour
* 1/4 teaspoon mustard powder
* salt & pepper to taste
* 1 cup milk
* 1 1/2 cups finely shredded cheddar cheese


1. Steam broccoli just until tender (about 5 minutes).
2. Melt butter in a saucepan then add flour, mustard powder, salt and pepper. While whisking, slowly pour in milk. Cook over medium-low heat, whisking the entire time, until sauce is thickened.
3. Add the cheese, continue heating, stirring until melted.
4. Place broccoli in a serving bowl then pour sauce over and serve.


When my kids started eating broccoli, it was cause for celebration, indeed! But, then it happened. They got tired of the same old broccoli. Besides just sprinkling some shredded cheese on top, what could I do? This is a great "fancy" broccoli dish. It's simple but your family will think you fussed for them. The added mustard makes this broccoli dish a real, unexpected treat.
